UHT stands for ultra-high temperature. This method of pasteurization depletes the vitamin and mineral count of milk even more than the standard pasteurization processe. In UHT pasteurization, milk is heated instantly from between 265° and 300°F (130° to 150°C) for 1 to 3 seconds before being flash chilled to under 39°F (4°C). Most often packaged in aseptic boxes, UHT milk can be stored up to 6 months without refrigeration. Once opened, it can last several weeks in the refrigerator.
