Evaporated milk is a canned product in which 60 percent of the water has been removed from whole milk. The process of evaporation, sterilization, and canning produces a slightly thicker milk with a light brown color.
It was created more than 100 years ago as a substitute for fresh milk and allowed for the transport and storage of milk without refrigeration. It can be consumed like regular milk by adding an equal amount of water. Evaporated milk can be stored for up to 1 year.
