Closely associated with England, clotted cream is also known as Devonshire or Devon cream, which is an appellation that refers to its origins in Southwest England. It is a rich, thick, and yellow cream made by gently heating whole milk in shallow pans and then allowing it to stand for up to 12 hours. The cream floats to the top in “clots,” which are then skimmed off.
