Cheeses in this group are considered either unripened or slightly ripened. What makes cottage cheese an example of an unripe cheese is that it is edible as soon as it forms curds. Feta is “slightly ripened” in that it is edible within a week of forming curds. Cheeses in this category also tend to be soft and have a high water content. Some examples of fresh cheeses are mascarpone, paneer, cottage cheese, and fromage blanc.
