What bloomy rind cheeses all have in common is a thin velvety rind encasing soft, often creamy cheese. In addition, these cheeses are all surface ripened for approximately 1 month before they are eaten. Surface ripening means that after being shaped they are sprayed with molds that flavor and ripen the cheese from the outside in. Camembert, Brie, and triple cream cheeses are all examples of bloomy rind cheeses.
