  1. Lightly dust the work surface with flour.

  2. You will be using the meaty portion of your hand.

  3. Flatten the rested dough on the work surface.

  4. Fold the upper third down onto itself.

  5. Using the lower portion of your hand, press and seal. Turn around and repeat.

  6. Press well to seal.

  7. Roll the dough into an even cylinder.

  8. Fold in half and score at the mid-point.

  9. Cut in half, and score each half into even-sized pieces. Cut.

  10. Dip a piece into some flour.

  11. Cup your hand around the dough and move the dough in a circular motion.

  12. Continue until the dough is smooth and tight.

  13. Then roll each ball back and forth.

  14. Continue rolling the other balls into oblongs.

  15. Dip the side of your hand in flour.

  16. Hold the oblong with the other hand, roll the floured hand about one-third down from the end.

  17. Continue rolling until the dough resembles a bowling pin.

  18. Repeat with remaining dough.

  19. Dip the tips of your thumb, index, and middle fingers in flour.

  20. Take the dough and hold it by its “head.”

  21. Place the dough in the buttered mold.

  22. Press the head into the “body” of the dough.

  23. Carefully remove your fingers.

  24. Flour your index finger, and press it in between the head and the body.

  25. Press down deeply.

  26. Ensure that the heads are secure.

  27. To make large brioche. Remove one-fouth of the dough and set aside. Flatten the larger piece of dough into a disk.

  28. Take an edge and fold it into the middle of the round.

  29. Press and seal with the meaty part of your hand.

  30. Turn the dough and continue all the way around.

  31. Turn the dough over.

  32. Cup your hands around the dough, and roll it in a circular motion on the work surface.

  33. Make a depression in the center.

  34. Place the dough in the buttered mold.

  35. Cup your hand around the smaller piece, and roll it in a circular motion on the work surface until smooth and tight.

  36. Roll back and forth at one end of the ball.

  37. The dough should be in the shape of a teardrop.

  38. With fingers dipped in flour, hold the larger end of the teardrop and press your fingers deeply into the center of the dough.

  39. Dip a finger in flour, and press it in between the “head” and “body” of the brioche.

  40. Be sure to press all the way to the bottom all the way around.

  41. To make a braid, measure out three pieces of dough of the same weight.

  42. Attach the three pieces at one end. Pieces 1, 2, and 3.

  43. Lift up 2 and place it over 3.

  44. Then lift 3 and place it over 1.

  45. Lift 1 and place over 2.

  46. Continue with the pattern until the end, then tuck the ends in underneath.

  47. Allow to rise in a warm place, then brush with egg wash before baking.
