Baked creams (also known as set custard creams) are egg/milk preparations that are first cooked on the stove top and then baked until set. Although they share elements of method and ingredients with pourable creams, baked creams do not accompany other desserts but are instead desserts unto themselves. Crème brûlée, crème renversée au caramel, and flan are all examples of baked creams that have their own particular recipes.
