  1. Place the cake on a cake board and trim off the excess.

  2. Start with the sides.

  3. Hold the palette knife at a narrow angle and follow the contour of the cake.

  4. Continue all the way around.

  5. Place a mound of buttercream on top.

  6. Spread evenly to cover the top.

  7. Allow the excess frosting to extend over the edges.

  8. With the palette at a shallow angle, move it toward you.

  9. Switch the angle of the palette knife and move it away, maintaining even pressure.

  10. Once smooth, lift the cake and remove the excess buttercream.

  11. Move the palette around and down at the same time.

  12. Continue around the cake.

  13. Place the masked cake onto another cake board, or plate.

  14. Allow to drop onto the cake board.

  15. The cake is now ready to be decorated.
