The term used in the USA for grilling. It differs from our understanding of the process in that it means exposing food to a high heat from above and below simultaneously. You can buy electric broilers, but will achieve the same effect on a piece of fish, for example, by putting it skin side down into a smoking hot pan briefly before transferring the pan to under a preheated grill.
