Filo or Phyllo

Paper-thin sheets of pastry used throughout the Middle East and North Africa for both savoury and sweet dishes, and available fresh and frozen. The sheets dry on exposure to the air and rapidly become unusable, so once the pack is opened keep the sheets covered with a damp cloth.
