The heart, liver, gizzard and kidneys of poultry. Giblets are rather more difficult to get hold of now that EU regulations forbid the sale of undrawn birds. However, chicken livers are widely available in 500-g tubs, and gizzards may also be bought separately When you can get giblets with your birds, they (livers excluded) are useful for making quick stocks to use as the bases for rich gravies.
