Green peppercorns are unripe black peppercorns and can be bought fresh in some supermarkets, from specialist Asian grocers or most commonly brined in jars. These last should be rinsed thoroughly under lots of cold running water before use. Green peppercorns were very chic in restaurant cooking 20 years ago and are currently suffering a well-deserved revival.
