The process whereby vegetable oils are chemically altered so that they are solid at room temperature, for use in products such as margarine. The vaunted health benefits of products resulting from the process are now being called into question because of the possibility that the trans fats produced may be even more seriously implicated in heart disease than natural saturated fats.
