Also called loaf sugar, jaggery comes from India and is made from the dark honey brown sap of the nippah palm. Similar to the palm sugar of Southeast Asia, it goes very hard on exposure to the air, so keep it in a zip-lock bag in the fridge. It is not as sweet as cane sugar; if it is not available, muscovado sugar may be substituted.
