The sap of the palmyra tree, a tropical palm, is simply boiled down, producing a crystallized, brown and sticky sugar that is sold in tins and as cellophane-wrapped cakes. It has a pronounced caramel flavour and is less sweet than cane sugar. When unavailable, muscovado sugar may be substituted.
