Panchphoran is an Indian spice mix made up of equal quantities of fennel seeds, cumin seeds, fenugreek seeds, black mustard seeds and kalonji or nigella seeds. It is mostly used to flavour vegetable dishes, such as the Spicy Grilled Aubergines.
