Pavé means ‘paving stone’ and refers to the original cobbled streets which still challenge the most advanced vehicle suspensions in old French towns. In culinary terms, it is used of a thick-cut steak of Charolais beef, and is today also used for desserts, implying a moulded rectangular presentation, usually of chocolate. However, in the contemporary menu, which seeks novel descriptions, it might well crop up among the first courses.
