Some recipes call for a pan or pot with a very tight-fitting lid to prevent loss of moisture. To ensure a complete seal, a stiff flour-and-water mixture, repère or luting paste in English, is used to make the join between lid and edge airtight. Make it in a proportion of 125 g / 4½ oz flour to 3½ tablespoons water. It is thrown away after the dish is finished.
