A salsa – properly salsa Mexicana – is a raw sauce based on chopped ripe tomatoes flavoured with finely chopped onion, chillies, garlic and, usually, coriander. Variations on this theme are served on most Mexican tables as a standard accompaniment to tacos and snacks. Sharp-tasting green salsas based on tomatillos are also common.
