The powerfully flavoured extract of sesame seeds is available in two forms: pale milder-flavoured sesame oil is used in Middle Eastern cooking, while dark full-flavoured Oriental sesame oil is made from toasted seeds and is generally used at the last minute to dress many stir-fried dishes. Use both types of the oil with caution as their potent flavour can swamp a dish.
