Sesame seeds have a nutty flavour and are high in protein and calcium. They are available as unhulled black seeds, unhulled brown seeds and hulled white polished seeds. Their high oil content means they go rancid easily, so store in a screwtop jar in the fridge. They are used in baking and for dressing vegetable dishes or in coatings for fried food.
