Truffled oil is very expensive, at around £16 per 250 ml / 8 fl oz, but a little goes a long way. It is by far and away the most successful flavoured oil, for the taste of white truffles shines through strongly without any sense of this being ersatz. It became very much the thing in the mid-’80s, dribbled over carpaccio with some rocket and shaved Parmesan. Be circumspect when you use it as it is so dominant a heavy hand will soon turn nice into nasty.
