Cooking apples (Brantley’s Seedling or similar) are sharp in flavour and soft in texture when baked. Dessert apples (Granny Smith’s or Cox’s Orange Pippin) are sweeter and more firm. Hollow out the core before filling - use sugar and a nut of butter as the basic filling. Add chopped dried fruit or nuts, cinnamon, mixed spice or grated citrus rind for additional flavour if desired.

  1. Core the apples and sprinkle with lemon juice. Score the skin around the middle to prevent it from bursting during cooking.

  2. Place the apples in a buttered ovenproof dish, fill with brown sugar and dot with butter. Bake at 200°C for 45-50 minutes.
