Fruits baked ‘en papillote’ maintain much of their moisture and flavour. Mingle fruit flavours by wrapping several types of fruit together. Heighten the sweetness with sugar. A nut of butter added just before baking enriches the result.
Butter a double thick rectangle of foil. Prepare the fruit. Here, nectarines and guavas are to be flavoured with some whole cardamom pods and brown sugar.
Place the fruit on the middle of the foil, fold into a neat packet, fold the edges to seal and place on a baking dish. Bake at 190°C for about 30 minutes, until the guavas are tender.
