Fragrant exotic fruits may be prepared as for Summer Pudding. Make a syrup flavoured with mixed citrus as the base for the firm fruits, which should be cut finely.
Squeeze the juice from 1 lime, 1 lemon and 1 orange. Cut the fruit into chunks. Bring the juice and shells to the boil with 300 ml water, cover and simmer for 30 minutes.
Strain the liquid and boil for 2 minutes with 100 g sugar. Cool slightly. Add 500 g fruit: diced melon, mango, pineapple, papaya and guava; halved lychees or physalis. Assemble as for Summer Pudding to complete.
