Stamping creates ice cream shapes with wonderfully clean lines. Use the same stamp to cut matching biscuit shapes and sandwich the ice cream between these.
Use a metal cutter rinsed with hot water to stamp out shapes. Leave them in position. Using a knife with a small point, cut away the mixture surrounding the stamped shapes.
