Poaching Meringue

Use two spoons to form a quenelle shape or oval. Scoop the meringue on one spoon and use the second spoon to slide it off the spoon sideways in a neat oval, straight in to the barely simmering poaching liquid. Poach gently for 3-4 minutes.
