Peaches, berries and exotic fruit are ideal for topping lemon cheesecake. Prepare the fruit according to type. Use evenly sized fruits or pieces of fruit.

  1. For an elaborate peach arrangement, start at the edge, overlapping fruit slices until most of the cake is covered. Work symmetrically.

  2. Make the arrangement more dense towards the centre. Finish by applying an apricot or redcurrant glaze over the fruit slices.
