Creamy custards or tangy fruit sauces and syrups complement baked batter puddings and can be used as decoration. Ice cream provides a superb hot-cold contrast. Here, crisp-baked apple puddings are shaped attractively in muffin tins.

  1. Dip thin slice from a quartered, cored and peeled apple in lemon juice to prevent discolouration.

  2. Arrange in deep, buttered muffin tins and pour in the Clafoutis better. Bake at 180°C for 20-25 minutes.

  3. While the apple puddings are cooking, dip unpeeled apple slices in a light caramel and place on non-stick baking parchment to set.
