Make a caramel. Peel and cut the fruit (apples and bananas are used traditionally). Dip the fruit into batter and deep-fry until golden brown. While draining the fritters, dip the base of the pot of caramel in iced water to stop it cooking. Coat the fritters in caramel, drain, sprinkle with sesame seeds and serve at once.
