There is a vast range from which to select. Good-quality items are the best value: high-quality metal bakeware will literally last a lifetime if treated correctly. This means washing and drying thoroughly after use and not exposing metals to sudden extremes in temperature, such as submerging an oven-hot tin into cold water. Baking beans When baking a pastry shell ‘blind’, it should be filled with ceramic beans during cooking, available from cook shops. In the absence of these, lentils or other dried beans can be used. Do not use kidney beans: they are poisonous when raw.
