Citrus rind or zest is the coloured part of the peel which contains the essential oils that give the fruit its flavour and aroma. The bitter pith inside is not generally used. The rind can be grated off or removed using a zester.

Using a zester This small implement is scraped over the surface of the fruit to remove the zest in fine strands that are larger than those that are grated. Apply even pressure and use either long, slow strokes or short, quick ones depending on the length you require.

Grating Choose a grater blade that corresponds to the size and fineness of the zest that you require. Do not press too hard or you will remove a lot of pith with the zest.
