The important point to remember when peeling pineapple is to gouge out all the spiky spines that are extremely unpleasant to eat due to their tough texture. Unfortunately, there is no quick way of doing this without losing much of the fruit.
Trim the ends off the fruit, then stand it on a board and cut off the peel in wide vertical strips from top to bottom. Cut the peel off thickly enough to take the worst of the spines with it.
Use the point of a small sharp knife to gouge out the remaining spines, one by one. Cut only as deeply as you feel is necessary each time, cutting out a little more if some of the spine remains.
