The skin of almond and pistachio nuts is bitter and can ruin the delicate flavour of the nuts if left on. The simplest method of skinning nuts is to blanch them in hot water. The skin is loosened by the process, so you can remove it easily while the nuts are still warm.

  1. Cover nuts with boiling water and allow them to stand for 10-15 minutes until the water has cooled to tepid.

  2. Take a nut and hold it between your thumb and index finger. Pinch the skin to encourage it to slip off.
