These delicately flavoured crisps, made from apples and pears, are a unique garnish idea and make perfect accompaniments for fruit desserts.
Make sure the fruit you use is firm-textured and not too ripe. Squeeze the juice of half a lemon into a bowl and dilute it with a little water. Using a Mandoline or a steady hand, slice apples and pears thinly to a thickness of about 2.5 mm. Dip the slices into the diluted lemon juice as soon as you cut them to stop discolouration. Mix 100 ml water and 100 g sugar in a pan. Place the slices into the syrup and boil. Remove the fruit, place on parchment and dry in the oven at 100°C for 4 hours, turning once half way through.
