Dust the powdered wafer mixture onto a silicone mat with an acetate template placed on top to form the required shapes. Remove the template. Carefully transfer the mat to a baking tray (or place the mat on the tray before dusting) and bake the wafers as specified in the recipe; the powder will have melted and set in one piece with a glossy appearance. Remove the baking tray from the oven. To shape the wafers while they are still warm, wrap each one around the specified mould and press the joining edges together to stick – whether it’s a plastic round tube for the Gaytime collars or a wooden block for the cellophane wafers in Raspberry Ripple, the method is the same.
