To make chocolate curls, use a small round pastry cutter to scrape over the surface of a chocolate block to make short curls. Another method is to melt chocolate until warm, then pour it onto a baking tray and leave it to cool. Run a scraper along the surface of the chocolate so it makes long, tight curls.
