Part of the citrus family, its pulpy flesh is cooked in sugar syrup until firm and translucent, resulting in a dense, slightly chewy texture with a bright green sheen. The Italian brand Guiso, the best you can buy in Australia, is preserved in large pieces to retain the natural sweet flavour.
