Part of the citrus family, its pulpy flesh is cooked in sugar syrup until firm and translucent, resulting in a dense, slightly chewy texture with a bright green sheen. The Italian brand Guiso, the best you can buy in Australia, is preserved in large pieces to retain the natural sweet flavour. Available from Simon Johnson stores, cheese shops and specialty food stores nationally.
