A paper product available from chef suppliers and sold as oil filter bags. You can also use clean muslin or a Chux cloth for the same result. These are used to remove impurities from a stock or solids or lumps from a cooked cream or custard. Pour the mixture through a filter bag positioned inside a conical sieve set over a large bowl or pan.
