This shredded filo pastry resembles vermicelli in appearance. It is traditionally used for making sweets soaked in syrup, generally with a nut filling. It can be baked or fried in clarified butter, depending on the recipe. Available from supermarkets and Greek or Middle Eastern pastry shops. (The most common brand in Australia is Antoniou.)
