This is a classified sweet black sherry from Jerez, Spain, made from the Pedro Ximénez grape. The grapes are sun-dried on the vine to concentrate their sugars before fermentation and fortification (like noble rot), with fermentation being stopped early by the addition of a spirit. Rich, dark, robust and packed with sweetness, Pedro Ximénez is a remarkable wine; it is viscous and amazingly sweet, tasting like a liquid Christmas cake with plump, sweet stewed fruit and rounded caramel notes. Think raisins, molasses, caramel, fig, burnt orange or chocolate with a great intensity of flavour. Available from specialist wine suppliers.
