The seeds and juice of this fruit are used in Asian, Indian, Middle Eastern and Mediterranean cooking. Buy whole pomegranate in season (late summer to the end of autumn) and scrape out the seeds, discarding the bitter white pith and leathery skin. The red seeds can be used whole or crushed and strained to make a delicious juice.
