If you have the time, plus a designated cool place and work surface in your kitchen, then you can make your own puff pastry. If not, buy commercially prepared pastry β not the thin frozen sheets at the supermarket, rather those from a reputable baker or patissier. I use the puff pastry sheets from Brasserie Bread in Sydney (brasseriebread.com.au), which are made with quality butter and sold in 5 kg packs. Check with your local baker as some will sell in 1 kg quantities. If you buy a large quantity, you can cut the sheets into manageable squares and freeze them between sheets of Go-Between or plastic film so they peel off easily when you need to use one or two.
