Pure Strawberry Juice

To get a perfectly clear juice, put equal amounts of water and frozen strawberries (I usually make 500 ml) into a stainless-steel bowl and cover with plastic film, then sit the bowl over a bain marie on low heat for 45 minutes. Line a round fine-mesh sieve with a double layer of muslin and gently spoon the mixture from the bowl into the sieve so the juice remains clear. Set aside and leave to drip and cool down for 2 hours; do not press or the juice will be cloudy. Discard the solids. Add sugar as required in the specific recipe. Store the unsweetened juice in an airtight container in the refrigerator for up to 2 days.
