Make sure you buy edible silver leaf, made from real silver and pounded into gossamer-thin sheets (it costs more than non-edible silver leaf). Used for dramatic effect as a decoration to celebrate extravagance, it has no taste and is an authorised food additive. Available in small packets, each fragile leaf is sheathed between layers of paper. Use the tip of a knife to transfer the leaf from the packet onto food – it has a tendency to stick on fingers so requires care when applying. Available from professional pastry suppliers.
