For a simple sugar syrup, place equal quantities of water and then caster sugar in a heavy-based saucepan, and bring to the boil over medium heat, then let it boil for a few minutes to dissolve the sugar. Let it cool completely, then store in an airtight container in the refrigerator for up to 2 weeks. To make a dense sugar syrup, use two parts sugar to one part water.
