Adding corn flour to dim sum fillings help bind the ingredients and seasoning together. Note however that using too much will lead to an overly thickened filling while using too little will result in a diluted, bland filling.
When adding corn flour to raw ingredients, sprinkle a pinch over ingredients and mix well. When thickening cooked fillings, mix corn flour with a little water before using. For every 1 tsp corn flour, mix with 2 tsp water.
