Potli

This is like a bouquet garni, but with spices instead of herbs. Whole spices are wrapped in a square of muslin, tied with food-safe string and added to the cooking pot. This allows for easy removal at the end of cooking, and produces a more subtle flavour compared to adding loose spices.
