Stovetop-Smoker Method

This is a simple, inexpensive affair consisting of a stainless-steel rectangular box with a rack in it and a cover that slides on and off. All you do is put down some sawdust or wood chips and a sheet of aluminum foil (this is especially important if you’re using sawdust; the foil keeps wood from getting on the food) and replace the cake-rack-like grill. You arrange the food on the grill, slide on the lid, and put the whole contraption on the stovetop. The temperature of the inside of the smoker can get quite hot, much like a very hot oven, but you can control the temperature somewhat by adjusting the stove.
