This Japanese soy sauce is traditionally a by-product of miso production; it’s made from soy beans, sea salt and koji and is usually gluten-free. If you buy a good-quality brand it is more likely to have been made in the traditional way, which is much better for your health. Tamari has a stronger, richer taste and aroma than regular soy sauce. Most organic tamari sauces contain no preservatives or other additives – just make sure you check the ingredients.
